These Cottage Cheese Brownies are pure chocolate bliss! They are incredibly fudgy, rich, and moist, with a deep cocoa flavor that melts in your mouth. You won't taste the cottage cheese, just intense, decadent brownie goodness!

Ingredients

Instructions 

  • First, preheat your oven to 350 degrees Fahrenheit. Line an 8 inch square pan with parchment paper.
  • In a mixing bowl, add the melted chocolate, blended cottage cheese, and coconut sugar. Stir together.
  • Then, add in the milk. Stir to combine. The batter will be runny.
  • Next, add in the gluten free flour, cocoa powder, and baking soda. Stir. The batter will be thick.
  • Fold in the chocolate chips.
  • Transfer the batter to the lined pan. Spread into an even layer.
  • Bake for 20 to 21 minutes or until just barely set in the middle.
  • Finally, remove the pan from the oven. Cool fully before slicing into.

Notes

  • If you prefer, you can use brown sugar instead of coconut sugar.
  • Add your cottage cheese to a blender before measuring. Blend until smooth.
  • If you aren’t gluten free, then all purpose flour can be used.
  • The brownie batter is very thick.
  • Do not bake too long. These brownies will look gooey but will firm up slightly as they cool.
  • Store in the fridge for up to 4 days.
