Cottage Cheese Brownies
These Cottage Cheese Brownies are pure chocolate bliss! They are incredibly fudgy, rich, and moist, with a deep cocoa flavor that melts in your mouth. You won't taste the cottage cheese, just intense, decadent brownie goodness!

Instructions
First, preheat your oven to 350 degrees Fahrenheit. Line an 8 inch square pan with parchment paper.
In a mixing bowl, add the melted chocolate, blended cottage cheese, and coconut sugar. Stir together.
Then, add in the milk. Stir to combine. The batter will be runny.
Next, add in the gluten free flour, cocoa powder, and baking soda. Stir. The batter will be thick.
Fold in the chocolate chips.
Transfer the batter to the lined pan. Spread into an even layer.
Bake for 20 to 21 minutes or until just barely set in the middle.
Finally, remove the pan from the oven. Cool fully before slicing into.
Notes
If you prefer, you can use brown sugar instead of coconut sugar.
Add your cottage cheese to a blender before measuring. Blend until smooth.
If you aren’t gluten free, then all purpose flour can be used.
The brownie batter is very thick.
Do not bake too long. These brownies will look gooey but will firm up slightly as they cool.
Store in the fridge for up to 4 days.
