Ingredients

Brownies

  • 1 cup pitted dates, softened
  • ⅖ cup creamy all natural peanut butter
  • ½ cup cocoa powder
  • 2 tbsp pure maple syrup, or honey

Topping

Instructions 

  • First, line an 8 inch by 8 inch pan with parchment paper.
  • To soften your dates, place them in hot water for at least 10 minutes. Then, drain the water.
  • Add your softened dates, peanut butter, cocoa powder, and maple syrup to a food processor or blender. Process until combined.
  • Press this mixture into an even layer in your lined pan.
  • Then, make the topping. Combine the peanut butter and the melted chocolate in a bowl. Stir until creamy.
  • Pour the topping over the brownies.
  • Place in the fridge for at least one hour to firm up.
  • Finally, remove from the fridge. Slice and serve.

Notes

  • I highly recommend soaking the dates in hot water. This allows them to soften, and thus, blend easier.
  • Feel free to use almond butter, cashew butter, or sunflower butter.
  • Feel free to add in chocolate chips.
  • Store leftovers in an airtight container in the fridge for up to 7 days.
