Paleo Bars are the perfect snack or dessert! Made with all natural ingredients, they are packed with protein and fiber to keep you feeling full and satisfied. These almond flour bars are also gluten free and dairy free, making them a great option for people with dietary restrictions!

Ingredients

Instructions 

  • First, preheat your oven to 350 degrees Fahrenheit. Line an 8-inch by 8-inch pan with parchment paper.
  • Melt the coconut oil in the microwave. Then, set aside.
  • In a large mixing bowl, add the coconut sugar and egg. Whisk together to combine.
  • Then, sift in the almond flour. Stir together. The batter will be very thick.
  • Add in the almond butter, baking soda, maple syrup, vanilla extract, and melted coconut oil. Stir together.
  • Fold in the dark chocolate chips.
  • Transfer the dough to the lined pan. Smooth out into an even layer.
  • Bake for 15 to 17 minutes or until a toothpick inserted into the middle comes out mostly clean.
  • Lastly, remove from the oven. Wait until mostly cooled before slicing and serving.

Notes

  • Use refined coconut oil for a neutral flavor.  Unrefined coconut oil has a slight coconut flavor.
  • If needed, replace the coconut oil with light flavored olive oil or avocado oil.
  • Use all natural creamy almond butter or cashew butter.
  • Use finely blanched almond flour.  Do not use almond meal.
  • These bars bake quickly.  They will be fudgy after 15 minutes and more cooked through around 18 minutes.
  • Store in an airtight container for up to 4 days at room temperature.
  • If needed, freeze for 1 month.
