These honey roasted cashews are sweet, salty and crunchy! This quick and easy recipe is great as a healthy snack or appetizer. Add these roasted nuts to salads or trail mix. They are easy, healthy and flavorful!

Ingredients

  • 1 cup cashews
  • 3 tbsp honey
  • 1 tbsp melted unsalted butter
  • ½ tsp sea salt, optional

Instructions 

  • First, preheat oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
  • In a bowl, add all ingredients. Toss until cashews are completely coated.
  • Arrange cashews in an even layer on the lined pan.
  • Bake for 15 to 20 minutes or until cashews are golden brown.
  • Finally, remove from oven. Allow nuts to cool for 10 minutes before carefully removing from pan. Leave in large chunks or break up into individual cashews.

Notes

  • Any type of cashews work, but I recommend using unflavored.
  • Both roasted and raw cashews can be used.
  • If desired, make this recipe using peanuts.
  • For dairy free, substitute butter with melted coconut oil or dairy free butter.
  • Keep a close eye on the cashews.  Honey can easily burn.
  • Use a rimmed baking pan.  This prevents any leaks.
  • Store in an airtight container for up to up to 2 weeks.
