These 3 ingredient peanut butter cookies are quick, easy and so delicious! They are great for any occasion including birthdays, Christmas, and more. This old fashioned classic recipe is naturally gluten free, dairy free and flourless!

Instructions 

  • First, preheat oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
  • In a bowl, mix peanut butter, sugar and egg. Stir to combine.
  • Then, roll dough into 1 inch sized balls. Place about 2 inches apart on lined pan.
  • Use fork to gently press down on each ball, creating a criss cross pattern. Do not press all the way down.
  • Bake for 10 to 12 minutes or until cookies are barely set in the middle.
  • Finally, remove from oven. Allow cookies to cool on pan for 5 minutes before transferring to a cooling rack.

Notes

  • I much prefer creamy all natural peanut butter for this recipe.  Thicker peanut butter (like Jif) will create more dry cookies.
  • If needed, substitute 1 cup coconut sugar or ¾ cup packed brown sugar.
  • Use fork to make a criss cross pattern in cookie dough balls.  Do not press down all the way.
  • These cookies are soft when they first come out of the oven.  Be careful handling them.
  • Store cookies covered at room temperature for up to 3 days.
  • These cookies freeze well!
