These Lucky Charms cookies are so fun and festive! The marshmallows add so much flavor and make these cookies unique. They are great for birthdays, St. Patrick's Day, Easter, and more!

Ingredients

Instructions 

  • First, preheat your oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
  • In the bowl of a stand mixer, add the softened butter, sugar, and brown sugar. Beat until creamy and no clumps of butter remain.
  • Then, add in the egg and vanilla. Stir to combine.
  • Add in the flour, baking soda, and sea salt. Stir to combine.
  • Fold in the Lucky Charms marshmallows.
  • Use a cookie scooper to scoop balls of dough onto the prepared pan. Space at least 3 inches apart.
  • Bake for 8 to 10 minutes, until the edges are lightly golden.
  • Finally, remove the pan from the oven. Allow the Lucky Charms marshmallows to cool for 10 minutes before removing to a cooling rack.

Notes

  • Use room temperature butter.  It should be slightly soft to the touch, but not melted.
  • Beat the butter and sugars until fully creamy.
  • The cookie dough will be pretty thick.
  • Do not bake too long.
  • Store in an airtight container for up to 4 days.
