Ingredients

Instructions

  • First, add ground beef to a large skillet over medium heat. Cook until brown and crumbly, breaking up with spatula.
  • Then, drain excess grease from pan. Add diced onion, olive oil and minced garlic to pan. Cook for 4 to 5 minutes or until onion is soft.
  • Add in beef broth and all seasonings. Stir to combine. Cook on medium for 5 minutes.
  • Remove ¼ cup of the liquid from skillet and add to a small bowl. Whisk in tapioca flour to liquid. Then, pour this slurry back into skillet and stir.
  • Add in canned coconut milk and nutritional yeast to skillet. Stir to combine.
  • Simmer for 10 to 15 minutes or until broth is creamy.
  • Finally, serve with cauliflower rice if desired. Top with fresh parsley!

Notes

  • Steak can replace ground beef if desired.  I suggest using either sirloin steak (cut into 1 inch cubes) or beef stew meat.  Brown meat before adding other ingredients.
  • Use canned coconut milk.  I recommend using the brand Thai.  This can be found in the Asian food aisle at most grocery stores.
  • Serve over cauliflower rice for Whole30 and Paleo, or grain free or gluten free pasta.
  • Store leftovers in an airtight container in the fridge for up to 3 days.  Store beef stroganoff and cauliflower rice or pasta separately.
