Ingredients

Instructions 

  • First, pat chicken dry on both sides with paper towels. Season with pepper and sea salt.
  • Then, grill chicken for 4 to 5 minutes on each side or until cooked through. Chicken is done when its internal temperature reaches 165 degrees Fahrenheit.
  • Meanwhile, in a large salad bowl, add mixed greens, strawberries, red onion and pecans.
  • Once chicken is done, slice into strips. Add chicken to the salad bowl.
  • Finally, toss salad with balsamic vinaigrette and serve!

Notes

  • Chicken can be cooked on a stovetop.  Simply add 1 tablespoon olive oil to a skillet and cook on low medium for 4 to 5 minutes on each side or until done.
  • Chicken is done when its internal temperature reaches 165 degrees Fahrenheit.  Use a meat thermometer to check doneness.
  • I highly suggest Primal Kitchen Foods Balsamic Vinaigrette.
  • Store leftovers in an airtight container for up to 3 days.
  • If making ahead of time, store salad with chicken separately from dressing.  This helps prevent sogginess.
