  • First, preheat oven to 350 degrees Fahrenheit and line a bread pan with parchment paper.
  • In a large mixing bowl, add mashed bananas, eggs and vanilla extract. Stir until combined.
  • Next, sift in almond flour and tapioca flour. Then add remaining ingredients (except strawberries).
  • Once mixed, toss 3/4 cups of the strawberries with a tablespoon of tapioca flour. Then, fold in coated strawberries to the batter.
  • Pour batter into the lined bread pan. Sprinkle remaining strawberries on top.
  • Bake for 55 to 65 minutes, or until a toothpick inserted comes out clean. If bread is browning on top but isn't done baking, add aluminum foil on top and continue baking.
  • Finally, remove from oven and cool completely before slicing.
