  • ½ cup melted Vegan butter
  • 1 cup brown sugar, tightly packed
  • 1 tsp vanilla extract
  • cup unsweetened applesauce
  • 1 ½ cups flour, all purpose or gluten free 1 to 1 flour
  • 1 tsp baking powder
  • pinch sea salt
  • cup Vegan chocolate chips

  • First, preheat oven to 350 degrees Fahrenheit. Line an 8 inch square pan with parchment paper.
  • In a mixing bowl, add melted butter and brown sugar. Stir to combine.
  • Add in vanilla extract and applesauce.
  • Then, add in flour, baking powder and sea salt. Stir to combine.
  • Fold in chocolate chips.
  • Transfer this dough into the parchment lined pan. Press down into an even layer.
  • Bake for 18 to 20 minutes or until the middle is set. Do not over bake!
  • Finally, remove from oven. Allow blondies to cool in pan for 30 minutes before slicing and serving.

  • For Vegan baking, I recommend Earth Balance butter.  Any brand should work though.
  • Both regular flour and gluten free 1 to 1 flour can be used.  Since I am gluten free, I used King Arthur Flour gluten free 1 to 1 flour.
  • The applesauce replaces eggs.  I much prefer this to flax eggs or chia eggs.
  • Do not over bake these blondies!  They really only take about 18 minutes.
  • Store leftovers in an airtight container at room temperature for up to 4 days.
  • They freeze well.
