Ingredients

  • ½ cup cold butter
  • ½ cup light brown sugar, tightly packed
  • ¼ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ½ cups flour, gluten free 1 to 1 or all purpose
  • ½ tsp baking soda
  • ½ tsp baking powder
  • cup white chocolate chips
  • cup chocolate chips
  • 10 Oreos, gluten free or regular
  • blue food coloring

Instructions

  • First, preheat oven to 375 degrees Fahrenheit. Line a baking pan with parchment paper.
  • In the bowl of a stand mixer, add cold butter, brown sugar and granulated sugar. Beat for 2 to 3 minutes or until no clumps of butter remain.
  • Then, add in egg and vanilla. Stir to combine.
  • Add in flour, baking soda and baking powder. Stir until a thick dough is formed. Add in 4 to 5 drops of food coloring. Mix until dough is uniformly blue.
  • Fold in white chocolate chips and chocolate chips.
  • Scoop out balls of dough. Place on lined sheet and flatten with hands.
  • Then, place an Oreo in the middle of each flattened dough ball.
  • Place another small flattened ball of dough on top of the Oreo. Use hands to fully enclose Oreo with cookie dough.
  • Bake for 9 to 10 minutes or until the cookies look barely set.
  • Finally, remove from oven. Allow cookies to cool on pan for 5 minutes. Then carefully remove to a wire rack.

Notes

  • Use cold butter right from the fridge.
  • Beat butter and sugars until no clumps of butter remain.
  • The dough will be thick.
  • Feel free to use all white chocolate chips or all regular chocolate chips if desired.
  • I only used about 5 drops of blue food coloring for the cookies in these photos.
  • Fully enclose the Oreos with cookie dough.  See photos above for reference.
  • Bake until the cookies look barely set.  They firm up slightly at room temperature.
  • Mine were perfect at 9 minutes.
  • Store in an airtight container for up to 4 days.
  • These cookies freeze well.
