These Vegan chocolate covered strawberries are decadent and delicious! They are made with only 3 ingredients and come together quickly and easily. This healthy little treat is great for Valentine's Day, the holidays and birthdays!

Ingredients

Instructions 

  • First, wash strawberries. Dry them completely. Line a large plate or baking pan with parchment paper.
  • In a microwave safe dish, add dark chocolate chips and coconut oil. Microwave in 30 second increments, stopping to stir between each increment.
  • Once smooth and creamy, dip each strawberry into the melted chocolate mixture. Place on parchment paper.
  • Repeat process for all strawberries.
  • Place plate or pan in fridge. Chill for at least 20 minutes or until chocolate coating has hardened.
  • Finally, serve!

Notes

  • Dry strawberries completely before dipping in chocolate.  Any water on the strawberries will prevent the chocolate from sticking.
  • Use Vegan chocolate chips to keep this recipe Vegan.
  • I used and love Enjoy Life dark chocolate chips.
  • My chocolate mixture only needed 2 increments of 30 seconds in the microwave.  Stop and stir to prevent burning.
  • Allow chocolate coating to fully harden before serving.
  • Store in the fridge for up to 2 days.  The strawberries will begin to ripen too much after about 2 to 3 days.
