Get the Recipe: Popcorn Bars

These popcorn bars are sticky, sweet, gooey and fun! They take only a few ingredients and a few minutes to make. They are fun for both kids and adults. Make them for birthdays, holidays, parties, entertaining or after school snacks!

Ingredients

Instructions 

  • First, line a 9 inch by 13 inch pan with parchment paper.
  • Add butter to a stock pot over low medium heat. Once melted, add in the marshmallows and vanilla extract. Continue stirring and cooking until completely melted.
  • Add in the popcorn. Stir until popcorn is completely coated. Add in half of the sprinkles and stir to combine.
  • Transfer the mixture to the lined pan. Use a spatula to press down into one even layer.
  • Drizzle melted chocolate and remaining sprinkles on top.
  • Allow bars to rest for 10 to 15 minutes to set. Then, slice into bars and enjoy!

Notes

  • Any type of popcorn can be used.
  • I recommend not using popcorn that is already too sweet.  The marshmallow coating will add additional sweetness.
  • For this recipe, I used almost a full 7 ounce bag of Smartfood popcorn.
  • The sprinkles and chocolate are totally optional.
  • Use parchment paper to help lift the bars out of the pan.
  • Store bars covered at room temperature for up to 2 days.  After that, the popcorn starts to become stale.
