Summertime dinners call for fresh fruit and sweet flavors.  Peaches are finally back in season and I’ve been loving them in both sweet and savory dishes.  Is there anything better than biting into a juicy ripe peach on a hot day?  They’re so sweet so I knew they’d complement chicken thighs well.  The peach glaze is a little sweet, a little tangy and so flavorful.  This dinner comes together pretty quickly and is a favorite around here!

Cook Time: 40 minutes
Total Time: 50 minutes

Servings: 4

 

Ingredients:

1 package chicken thighs (about 8 thighs)
2 TBL olive oil
1/2 cup coconut aminos
1/2 cup rice vinegar
1/2 tsp garlic
1 tsp ginger
2 peaches, cut up
2 peaches, for grilling

Directions:

In a large skillet, brown chicken thighs in olive oil.  Sear for 4-5 minutes each side before reducing heat.

Reduce heat and allow thighs to cook for 10 more minutes on each side.

In a small bowl, combine coconut aminos, rice vinegar, garlic and ginger.  Pour over chicken.

Let simmer.

About 5 minutes before you’re ready to serve, add cut up peaches to the skillet.

Optional: grill sliced peaches on indoor grill pan or outdoor grill, just 3-4 minutes per side.
