This breakfast is packed with tons of flavor and tons of protein.  I love having a protein-filled breakfast because it keeps me full for hours.  Since I typically run in the mornings, this is the perfect post-run meal.  It’s as easy as adding all the ingredients to a skillet and then baking it.  I use my favorite 6″ cast iron skillet which easily goes in the oven.  I also love adding in new veggies and changing up my source of protein.  Enjoy this one!

Ingredients:

3 eggs
1/4 cup spinach
2 TBL red onion, chopped
3 TBL sausage (I used this one)
1 TBL coconut oil, melted
Salt and pepper to taste

 

Directions:

Preheat oven to 350 and grease small skillet with coconut oil.

In a bowl, scramble eggs.  Add in remaining ingredients and mix.

Pour mixture into skillet and bake for 20 minutes.
