Great recipe! I used brussel sprouts (because I didn't have green beans and who doesn't love brussel sprouts cooked in bacon fat?!), purple carrots, and red onions for the veggies. After browning the chicken wrapped bacon in olive oil, I drained some of the fat and then sauteed the veggie mix in the fat. I put the veggie mix in the middle of the pan, the chicken on the perimeter, and roasted at the recommended temp. It was delicious! Thank you for the inspiration! Also, I live in Kittery and told my coach at the crossfit gym in York that I am a total "fan girl" of yours!
