Use pork tenderloin, not pork loin. They are different!

The sea salt and pepper add the perfect amount of flavor without being overwhelming.

Any cooking fat will work. Butter, ghee, avocado oil and refined coconut oil can be used instead of olive oil.

Coconut aminos is the gluten free and soy free version of soy sauce. It can be found in the Asian aisle at most grocery stores. I buy the brand Big Tree Farms on Amazon.

Minced garlic and ground ginger add a ton of flavor to the sauce and the pork. Feel free to use garlic powder or fresh ginger if needed.

The chopped green onion garnish is entirely optional!

Marinade

An easy and delicious teriyaki marinade really elevates this pork tenderloin! It is made with only coconut aminos, minced garlic and ground ginger.

This marinade helps keep the pork super moist while cooking. In addition, it is great to pour over the meat when eating.

How to Make

Step 1

First preheat oven to 375 degrees Fahrenheit.

Step 2

Pat pork tenderloin dry with paper towels. Season with sea salt and pepper.

Step 3

Add olive oil to cast iron skillet over medium heat. Place pork in skillet.

Sear for 2 minutes on each side. Then remove from heat.

Mix coconut aminos, minced garlic and ginger in a small bowl.

Then, pour this mixture over pork.

Transfer skillet to oven. Bake for 18 to 20 minutes or until cooked through.

Finally, remove Whole30 pork tenderloin from the oven. Wait around 5 minutes then slice and serve.

Instant Pot Method

  • Press sauté. Add olive oil and pork to Instant Pot.
  • Sear on all sides.
  • Press cancel.
  • Add in coconut aminos, minced garlic and ginger. Stir to combine.
  • Secure lid. Pressure cook for 3 minutes.
  • When timer goes off, allow pressure to naturally release for 10 minutes.
  • Then, manually release remaining pressure.
  • Check internal temperature of pork before serving.

Expert Tips & Tricks

For best results, use a fresh high quality pork tenderloin.

If you only have frozen, thaw completely.

If pork is too long, slice in half so that it fits in the pan.

Pat pork dry with paper towels. This helps the pork get even more crispy when seared.

Allow oil to get hot before placing pork into skillet. This also allows the pork to get crispy on the outside.

After done cooking, let pork sit in juices in the skillet for 5 minutes. This keeps the pork moist and tender.

Use a meat thermometer to accurately measure internal temperature of meat. Cook until at least 145 degrees Fahrenheit. This is considered safe to eat.

  • Add olive oil to a cast iron skillet over medium heat. Once oil is hot, place pork in pan. Cut pork in half if it is too long to fit in the skillet.
  • Sear for 2 minutes on each side.
  • Then, turn off heat.
  • In a small bowl, mix together coconut aminos, minced garlic and ginger.
  • Pour this mixture over pork.
  • Then, bake in the oven for 18 to 20 minutes or until internal temperature reaches at least 145 degrees Fahrenheit.
  • Once done cooking, remove skillet from oven. Allow pork to sit in the skillet untouched for 5 minutes to retain its juices.
  • Then, slice and serve. Baste with sauce if desired and garnish with green onions.
