Sorry but this recipe seems wrong. 2/3 of liquid for 2 cups of dry? This is like a bread dough and in no world would I describe as “thin”. Can author confirm?

They are good muffins, but the batter is very thick, not thin. 2/3 C of milk is not much for 2 cups of mix. Next time I will add 1c milk and see how that goes. I added dried blueberries to the top, I believe I should have mixed in. Overall, a keeper.

My son found a similar recipe in his High Five magazine, but tore up the cook time part – so I had to improvise with this recipe. Hands down I guarantee it turned out better than the original recipe would have. I used Birch Benders Paleo mix, and it worked perfectly. The entire family enjoyed them!
