This Paleo Vegan Chocolate Almond Butter Bark combines two of my favorite flavors: dark chocolate and almond butter.  It’s super simple to make and requires no baking time!  For this recipe, I highly recommend a runny almond butter (not too thick or chunky).  I used the creamy salted almond butter from Trader Joe’s for this recipe.  I typically make this around Christmas but it’s delicious for any time of the year.  This bark is the perfect freezer find.  I love to keep mine frozen for best results.

Ingredients:

4 TBL melted coconut oil
1 cup dark chocolate chips
1/3 cup almond butter

Directions:

In a microwave safe bowl, melt chocolate chips with 2 TBL coconut oil.  Melt in 30 second increments, stopping to stir between each.

Once melted, spread over a parchment lined cookie sheet that has edges.

In another microwave safe bow, melt almond butter with remaining 2 TBL coconut oil.  Melt in 30 second increments, stopping to stir between each.

Once melted, pour over melted chocolate and using a knife or toothpick, swirl almond butter into chocolate.

Freeze at least 30 minutes or until bark is set.
