These Paleo Apple Pies Bites are everything you love about a classic apple bite but in a more convenient and fun little bite!  The “crust” is a crispy almond butter cookie that is hearty and nutty.  It provides the perfect place to hold the sweet cinnamon apples.  The apples are heated with coconut oil, cinnamon and nutmeg in a skillet which makes the extra flavorful and warm.  The coconut oil has such a high melting point which allows the apples to get gooey and tender without burning.  The final piece to the puzzle is this homemade caramel sauce.  It’s absolutely delicious and could not be easier to make!  Just add the ingredients together and microwave.  The crispy almond butter cookies, gooey cinnamon apples and smooth caramel sauce come together for one insane combo.  These apple pie bites would be perfect for any holiday party but they’re also great for an after school snack or a fun rainy day treat.  All your favorite flavors in one little bite!

Ingredients:

Crust:
3/4 cup almond butter
1/4 cup coconut sugar
1 egg, room temperature
1 tsp vanilla
1 tsp baking soda
1/4 tsp cinnamon
Pinch salt
1/3 cup dark chocolate chips
1/2 cup full fat coconut milk
1/2 tsp vanilla

Apple Filling:
2 apples, sliced small
1 TBL coconut oil
1 tsp cinnamon
Dash nutmeg

Homemade Caramel:
1/3 cup date syrup (or maple syrup or honey)
1/2 cup almond butter
3 TBL coconut oil, melted
1 tsp vanilla

Directions:

Preheat oven to 325 degrees and grease a muffin tray.  Combine all ingredients for the crust in a large mixing bowl.  Once combined, press a small ball of dough into each muffin cavity.

Bake for 8-10 minutes, careful not to over bake.

While the cookies are baking, add apple filling ingredients to a skillet over low heat.  Cook on low for about 10 minutes, until apples are soft.

Once crusts are done, remove from oven and using your thumb or the back of a spoon, press down slightly in the middle of each one.  After 10 minutes of cooling time, remove to a wire rack.

Spoon about a teaspoon full of apple filling into each crust.

Refrigerate for at least 1 hour.

Before serving, add caramel ingredients to a microwavable bowl and stir to combine.  Drizzle over mini apple bites.

Note: only drizzle caramel over the bites you’re planning to eat.  The caramel drizzle will make them mushy if stored in the fridge for several days after.
