I have always loved having pancakes or waffles for breakfast on the weekends.  These paleo waffles use almond butter as a base which gives them a hearty nutty flavor.  I love topping mine with bananas, cinnamon apples, or dark chocolate chips.  Then of course, plenty of maple syrup.  Get ready to make these waffles and have your house smelling amazing and the most delicious breakfast on the table!

Ingredients:

2 eggs
6 TBL almond butter
4 tsp coconut sugar
2 tsp baking soda
1/2 cup almond milk (plus more for a thinner batter)

Directions:

Add all ingredients except milk to a blender.  Blend (or mix by hand) until smooth.  Add milk a little at a time until you achieve your desired consistency.  Thicker batter will produce thicker waffles.

Spray waffle iron with coconut oil.  Cook for 5-7 minutes.
