Can you use alond or coconut flour? Just add a little xanthum gum?

Unbelievably delish! Such a “fancy” cookie without a lot of labor.
I got a perfect 3 dozen cookies using a #50 cookie scoop, same bake time as listed.
I doubled the glaze recipe, since I had more tops to glaze, and it was perfect!

Just made these with GF 1:1 flour and wow! Amazing! I added a teensy bit more lemon juice to the glaze to thin it out a tad. Made about 32 cookies using my 2 tb cookie scoop. This is my go to recipe for Lemon Ricotta Cookies here on out thank you!

I love how lemony these cookies were, the kids couldn’t get enough. Perfect with a cuppa!
