					<description><![CDATA[I know it said to only use AP or GF AP flour and that others wouldn’t work. But I wanted to try anyway! I did a combination, and they turned out heavenly. Like some of the best cookies I’ve ever made! I was going to just do spelt and oat, but I didn’t have enough of either. So I did what I had of those, then used tigernut flour, golden wheat, and a teeny bit of pumpkin protein powder (literally just one ingredient, so basically like pumpkin seed flour haha). I also threw in a sprinkle of oats for fun. The texture is like pillows!! I also used avocado oil instead of coconut. I used Pascha bittersweet chocolate chips. Next time I might even do part unsweetened chocolate chips. Anyway, I wanted to leave this review in case anyone else was curious about trying other flours out! ]]></description>
