Making this for the third time! The first time was amazing, the second time I used frozen bananas but didn’t drain liquid, and it didn’t turn out as nice. Back to fresh ripe bananas. I add Lily’s caramel chocolate chips and chopped pecans. Using a brownie pan (no loaf pan here) and baking time is less. Nice recipe

This looks like a lovely bread. Would you be willing to post the weight measurements (at least for flour)? I just bought my first bag of cassava flour and I am nervous to use it because of the cost! I would feel better using weight measurements for accuracy. Thanks in advance.

Delicious!! I used 3tbsp extra virgin olive oil instead of butter and added slightly more banana and it turned out exactly how I like it … beautifully moist. Thank you so much for sharing and I shall definitely be making this again!

Mine was good! I substituted a bit more banana for the coconut milk. Then I put it in my iron skillet bread pan. Delicious.
