Hi Lisa! Yes, it can. Be sure to really squeeze out the excess water from the carrots, otherwise the loaf can be dense. Line a bread pan with parchment paper and bake for 35 to 40 minutes. Enjoy!

I haven’t tried making that substitution in this recipe. I typically use applesauce instead of eggs for vegan baking, but it may make these muffins a little dense.
