In reply to Ellen. Hi Ellen! The coconut oil should be solid, not soft at all. If your house is warm, it may be soft at room temperature. It definitely can't hurt to chill the coconut oil first. Or, you could mix together the dough and then chill that. Enjoy!

These are the perfect healthy alternative to traditional cookies. The cookies are deliciously soft and chewy with a lovely nutty flavor. Made them yesterday and already want to make more as the family has eaten them all.

I loved these, they were just the right consistency and so easy to make.
Also love that I can serve them to all my kids as the youngest has a wheat allergy. It’s not a severe one, but it is bad enough that he can’t usually eat normal cookies. These were perfect!

Well, I am obsessed! These almond flour cookies are fabulous. They are soft, moist and chewy. I wanted to make a chocolate chip cookie recipe GF without a GF all purpose flour and these were perfect!
